If you're a fan of Schitt's Creek, you've probably pondered a few questions, the most important of which is, what the hell does fold in the cheese mean?! Well sit down, bébés, because someone is finally teaching us what to do to make Moira's famous enchiladas.

Cooking YouTuber Andrew Rea of the uber popular account Binging With Babish decided to take on cooking the enchiladas recipe from the show's Family Dinner episode. Even if you don't watch Schitt's, you have probably watched this scene as it's become a huge meme and super popular on TikTok. The TLDR is that both David and Moira clearly don't know what "fold in the cheese" means, though Moira insists she does, and they both fight about it until David gets so frustrated that he has to leave (you can watch the whole thing here in case you want a laugh!).

"How do you fold it? Do you fold it in half like a piece of paper and drop it in the pot, or what do you do?" David asks.

For those of us who are not formerly super rich, we might know vaguely what folding in the cheese means (although when I went to explain it just now I literally quoted Moira in my brain saying "you fold it in" so what do I know???). In the latest Babish episode, however, he finally gives us a clear definition.

"[It] basically just means stirring gently from the bottom upward folding the liquid up over the cheese so as to help it melt gently and not break the sauce," he says, while using a rubber spatula to stir queso.
